Torghut Pie
The Mongolian people living on the Bayinbulak grassland in Xinjiang have a special delicacy - Turghut pie. This kind of pie is made of white flour or buckwheat noodles, mostly filled with beef and mutton, the skin is as thin as paper, fragrant and delicious, known as "dumplings of Han people, pies of Mongolians".
According to legend, when Genghis Khan came to the Hongjira tribe, the people of the tribe brought out their own delicacy "Moagatie Hairimen" to entertain him. After eating one, Genghis Khan felt that it was crispy and fragrant, and said excitedly: "This is the most delicious meal I have eaten so far. How is this made?" He ate 18 of them in a row.
People introduced: "Cut fresh beef into slices, then put all kinds of wild vegetables in the middle of the meat, and roast it until it is half-ripe." Genghis Khan heard this and said: "I want people to eat this kind of food.!” Later, after several centuries of inheritance and innovation, it finally developed into today’s Torghut pie.
It is said that making Torghut pies requires dozens of processes just for kneading the noodles. Eggs must be added to the dough, so as to ensure smooth and soft noodles and thin and transparent skin.
